Mix Veg Restaurant Style
Many of us are fond of the Restaurent Style Food.So today we are going to make Restaurent Style Mix Veg Sabji.
Here are the ingredients :
1 Veggies :
Cauliflower ( florets) 2 cups
French Beans ( cut into 1 inch pieces) 1 cup
Onions (roughly chopped ) 1 cup
Capsicum (diced )2
Lady's Finger (1 inch pieces )1 cup
Potatoes (cubed) 1 cup
Fresh Paneer (cubed) 1 cup
2 For Gravy :
Onions 2
Tomatoes 2
Fresh coconut grated 2 cups
Melon seeds 1/2 cup
Ginger 2 inch piece
Garlic cloves 4
Green Chilly 2
3 Spices :
(Red Chilly Powder, Coriander Cumin Powder, Garam masala Powder)
Whole spices ( Bay leaves 2 , Cumin Seeds, Green Cardamom 4 , Black Cardamom, Cloves 2, Cinnamon Stick 1/2 inch)
4 Salt to taste
5 Cooking oil 7 to 8 tablespoons
6 Water as required.
We are making this Sabji in Pressure cooker. So Less time.
First , soak all the chopped veggies in normal water. And let's prepare the gravy. Slightly roast all whole spices until they release the aroma. Do not let them change the colour. Transfer them into a plate and in the same kadhai add chopped onions and a tablespoon of salt. When onion gets soften add tomatoes and roast again until the juices get dried.Then simmer the gas and add grated coconut and melon seeds.Switch the gas off and add green chilly pieces, 4 garlic cloves and ginger pieces into this. Let this mixture get cooled down.Blend this mixture into a fine paste by adding a tablespoon of water.
Now on a medium gas flame heat oil.When oil is hot, add whole spices. Quickly add the masala paste and saute it nicely for 1 minute.Then add the powdered spices and mix it again.Now add the chopped onion and all vegetables one by one along with Paneer cubes.Add salt and half a cup of water.Close the lid of the pressure cooker and let the sabji cook on a low to medium gas flame.When aroma releases switch off the gas and let the pressure cooker cool down completely.When pressure cooker is cooled down, open the lid and mix gently. Here , The Restaurent Style Mix Vegetable is ready!Garnish with coriander leaves.
Enjoy it with Naan, Parantha or with Jeera Rice.
