Achari Stuffed Baingan

 Today we are going to make another tasty sabji out of brinjal.I guarantee that people who do not like to eat  brinjal will definitely fall in love with brinjal.So let's begin.

Ingredients :

Small/medium sized Brinjals- 10 nos.

Small sized potatoes - 4 to 5 nos.

Any type of beans (Surti papdi/broad beans) completely optional 

Green chilly -1 no.

Lemon - 1 no.

For masala paste :

Fresh grated coconut 1 cup ,Onions (medium sized) - 2 nos.Tomatoes - 2 to 3 nos.green chilly 1,garlic cloves-2 chopped coriander leaves 1/2 cup, chopped mint leaves 1 cup, salt to taste.

Spices :

[ Coriander cumin powder- 2 tablespoons

turmeric powder 1 tablespoon, 

red chilly powder 1 tablespoon, 

asafoetida powder 1 teaspoon ,

amchur ( dry mango)powder 

 black cardamom 2 nos , star anise 1 no.]

Cumin seeds - 1 tablespoon

Salt to taste

 Method :

At first , we will make a masala powder by mixing all the spice powders mentioned above. Black cardamom and star anise can be crushed on a stone grinder.

Wash and slit the brinjals as well as potatoes in the centre to make a criss cross mark.Do not let the segments separate.

Now we will make the main taste maker paste.For this, in a mixi jar , add chopped onions , tomatoes , garlic cloves,coriander and mint leaves,and the above mentioned mixed masala powder.Grind these all ingredients to a fine paste using half tablespoon of water.Squeeze a lemon to this paste.

Mix it well and stuff the brinjals and potatoes with this paste.



Now heat oil in the pressure cooker and add cumin seeds to it.When it crackles, add slit green chilly and the masala paste and saute till oil separates.

Put the stiffed brinjals,potatoes and beans to it.Mix well.Add half cup of water and salt if required.Remember,we have already added the salt into masala paste. 



Pressure cook the sabzi for 4 to 5  minutes on medium gas flame or till 2 whistles. 

Open the pressure cooker after when it completely releases pressure.

The Achari Stuffed Baingan sabzi is ready to serve.

Have it with paratha, naan or puri.Also can be enjoyed with jeera rice , polao or simple dal chawal.
