Alu Vadi ( Patra/Arum leaves discs)

This is a sweet and sour spicy food item which is liked by all age groups at any time. You may have it either as tea time snack or can enjoy with lunch or dinner. It doubles the joy when it is served in party.It is famous by the name Alu Vadi in maharashtra.Also in gujarat it is called Paatra. The style of making this yummy dish is different in both the states. 

Today I am describing The Arum Leaves Discs in Maharastra Style.So we will call it  Alu Vadi.

Ingredients:

  • Arum Leaves   -5to 6
  • Chickpea flour   -  1 bowl (7 to 8 tablespoons
  • Fresh coconut grated  - 2 bowls 
  •  Spices ( red chilly powder, garam masala powder, cumin and coriander  powder)   - two tablespoons each
  • Ginger garlic paste  -1 tablespoon (totally optional )
  • Tamarind pulp   - 1 tablespoon 
  • Jaggery -1 tablespoon
  • Salt  - to taste 
  • Water  - as required to make thick paste
  • Cooking oil  -3 to 4 tablespoon

Preparation :

1 ) Blend the grated coconut and 2 tablespoons of water and make coconut milk.
2)  Cut the stalks of the Arum Leaves,wash and dry them.
3)  With the help of rolling pin, press  the hard lines of the leaves.

Method:

We will make a thick paste to spread on the Arum leaves.For this , in a mixing bowl take chickpea flour, spices , tamarind pulp, jaggery and salt.  Mix these ingredients by adding little water. Make a smooth paste with no lumps.Adjust the consistency as we are going to spread this mixture on the Arum leaves. 
Spread a small amount of this paste on a biggest size of the Arum leaves.Now repeat this step to all of the leaves.We have to arrange these leaves in order to their size. That means the biggest leaf should be at the bottom and the smallest leaf should be on the top.Now make a tight roll by applying paste.Wrap the roll from wider side to narrow side.Cut the pieces of this roll with a sharp knife.


Now heat oil in a frying pan and add these pieces i.e. discs to it. Let them fry for 2 minutes with the lid closed.Now open the lid and pour the coconut milk on the discs and close the lid again.Let the discs cook in the coconut milk.As the coconut milk is fully absorbed in the discs, the dish is ready !
 Have it as your party snack or enjoy with the meal.

Notes:

Do not apply too much chickpea flour paste on the leaves as the roll will become heavy.
 
The discs should be cooked on a slow gas and with a closed lid, when coconut milk is added.
