Bhuna Matar Masala/Green Peas Dry
In India,There are lots of types in which Green Peas or Matar is cooked.Wheather in the form of Sabji, Kachori,Cutlets etc.
Today , I would like to share a Matar recipe which I personally like and that is Bhuna Matar.This is a Dry Sabji prepared in a simple way and limited ingredients.So let's start.
Ingredients:
Green peas - 2 cups
Onion ( small size ) - 1
Tomato - (medium size) -2
Green chilly garlic and ginger paste - 1 tablespoon
Cumin seeds -2 tablespoons
Turmeric powder 1 teaspoon
Fresh coconut grated - 4 to 5 tablespoons
Salt to taste
Vegetable oil - 5 to 6 tablespoons
Method:
First we will boil the green peas to reduce the cooking time.To prevent green peas from mashing , we will boil them in a steamer by greasing them with oil.Remember , we have to cook it just 10%.
Chop the onions and tomatoes finely and transfer them into a chutney grinder. Add green chilly garlic and ginger paste to this and make a fine paste. If required, you may add a tablespoon of water while grinding the paste.
Now In an iron kadhai or any other type of kadhai, heat a generous amount of oil.When oil gets hot add cumin seeds.When they sizzle, add a teaspoon of turmeric powder.Stir a while and quickly add the grinded masala past and salt and saute this mixture untill the oil separates from it.When oil is separated from the mixture , add the boiled peas to it.Mix it well as the peas shoul nicely coat in the masala.Keep the lid on the kadhai and let the peas cook nicely on a low gas flame. You have to check and stir in between as there are the chances of masala sticking to the bottom of the kadhai.If required, you may sprinkle some water to this. Peas should cook completely.When the sabji is dried and peas cook completely the sabji is ready to serve!
Notes:
The peas should not overcooked while boiling as they will get mashed while sauteing in the masala.
If peas are overcooked you can transfer them on a strainer and pour cold water to atop the cooking process.Or you can transfer them into deep freezer when they are slightly cooled down.
As the name suggests Bhuna Matar that means the roasting process is much important.So the masala and the peas both should be roasted nicely.
This is a dry sabji so the water should completely dried.
