Brinjal Sabji/Baingan Aloo Sabji
Brinjal is one the popular vegetable liked by more than half population in India.In India,the sabji is prepared in various forms in various states.
Today , we are going to make the sabji in authentic Malwani style of Konkan region in Maharashtra state.
Ingredients :
Small Brinjals : 3 to 4 nos.
Potatoes ( medium sized ) : 2 nos.
Tomato ( small size) 1 no.
Onion ( roughly chopped) 2 nos.
Fresh coconut (Grated) : 5 to 6 tablespoons
Garlic cloves :2 to 3
Curry leaves 7 to 8
Spices :( Red chilly powder , Garam Masala , coriander powder)1 tablespoon each or Mix Masala 1 tablespoon
Salt : to taste
Cooking oil :3 to 4 tablespoons
Water : 1/2 cup or as per requirement
Preparations:
Wash the Brinjals ,potatoes and tomato. Cut the brinjals into 8 parts.(you can make pieces as per your convenience).Deep these pieces into water. Cut the potatoes according to the size of brinjal pieces.Deep these pieces into water.
Chop the onions and tomato.Grate the fresh coconut.Chop the garlic cloves finely.
Method:
Heat oil in a pan.Then add the tempering i.e Mustered seeds , cumin seeds,asafoetida powder and turmeric powder.Do not let these materials burn.Then add chopped garlic and chopped onions along with a pinch of salt.When the mixture gets fried add the potato pieces.Add 1/2 cup of water and close the lid of the pan. Check the potato pieces in between. When potatoes are cooked 1% then add the brinjal pieces.Close the lid again.If water is reduced , add 2 to 3 tablespoons of water and let the vegetables cook.When the potatoes as well as brinjals are soft add Mix Masala or all spice powders mentioned in Ingredients.Also add the grated coconut and mix it well.Let all veggies be nicely cooked.
Here , the Brinjal Sabji is ready to serve !
It goes with Rotis or Chapatties. Also with Dal Bhat.
