Lady's Finger Sabji /Bhindi kaddu ki sabji

Lady's Finger is one of the favourite vegetable in india.Especially for kids Bhindi ki sabji is the most demanded vegetable.
There are many types of recipes made out of lady's finger or bhindi.
Today we are going to make Bhindi ki sabji with an unique combination.That is Bhindi and Kaddu ki sabji which is Lady's finger cooked with Pumpkin. 
So let us start.

Ingredients:
*Lady's finger  - 250  grams
*Pumpkin  - 100 grams
*Fresh coconut grated  - 6 tablespoons 
*Kokum - 2 pieces  or Tamarind paste - 1  tablespoon
*Green chilly   - 2 nos
*Curry leaves  - 7  to 8
*Musterd Seeds, Cumin Seeds , Turmeric powder 1  tablespoon and a pinch of Asafoetida powder
*Salt and sugar to taste 
*Edible oil  - 6 to 7  tablespoons
*Water 1 cup


Preparations:

Wash and cut the lady's fingers into 1/2 inch pieces. Peel and cut the pumpkin into pieces accordingly. Grate the coconut and sice the green chillies lengthwise.

Method:

Heat the pan on medium gas flame.Add the oil into it. When oil is hot , add the sizzling materials that is musterd seeds and cumin seeds. When they crackle, add turmeric and asafoetida powder.Then add sliced Green chillies and curry leaves.Fry for 1/2 second.Then add Pumpkin pieces.Saute till all spices are coated with pumpkin pieces.Add salt and sugar.Add 1/2 cup of water and let the pumpkin pieces cook with  closed lid.When pumpkin is slightly soft, add lady's finger pieces along with kokum pieces or a tablespoon of tamarind paste.Give it a good mix and let the vegetables cook with a closed lid. Check and stir after every 1 second.When Pumpkin and Lady's finger is  cooked nicely switch off the gas flame and add fresh grated coconut.Mix it well and the sabji is ready.



Note:

*You can make this sabji in pressure cooker also.In such case the quantity of oil required is slightly high and the less water(hardly 3 to 4tablespoons) is required.Then you have to cook the sabji on a very low flame.Switch the gas off when aroma releases.Need not wait for a whistle.
*If you want you can replace kokum or tamarind with a tablespoon of lime juice.
Also you can add Roasted crushed peanuts on the place of coconut. 

 

Serves:

3 To 4 people.
