Makhana Chivda/Makhana Chiwda
Makhana is none ither than Lotus Seeds.It is also known as Fox Nuts and is very much nutritive.Ayurveda or naturopathy has discovered that it is very good for Heart,Bones and digestive system.It detoxifies the lever and also a good food for Diabetic Patients. You can consume Makhana in any form as it is a low calorie diet.
Today we are going to make a tea time or all time snack item out of Makhana. So let's start making Makhana Chivda.
Ingredients :
Makhana- 250 grams
Peanuts-50 grams
Dry coconut thin slices-20 grams
Cashew nuts-50 grams
Spices (turmeric powder 1 teaspoon,asafoetida powder a pinch, red chilly powder 1 tablespoon or as per your taste, chaat masala or anardana powder 1/2 tablespoon.)
For tempering mustered seeds 1 tablespoon , cumin seeds 2 tablespoons and whole coriander seeds 1 tablespoon
Red / Green chillies (1/2 inch pieces)
Curry leaves 7 to 8
Salt to taste
Vegetable oil 6 tablespoons
Method:
For this recipe , the crunchiness of all ingredients is essential.especially the makhana should be nice and crunchy.
So we will take a tablespoon of cooking oil in a kadhai and heat it to medium temprature.Add the makhana to this oil and saute it by rotating till the makhana becomes light and crunchy.Do not let the makhana burn and check its crunchiness by crushing one of them.
When makhana turns nicely crunchy transfer it to a plate to cool down.Now in the same kadhai take 2 tablespoons of oil and fry the peanuts, cashew nuts ,coconut pieces and red chilly pieces one by one till they are crispy. Transfer them to another plate. Now in the same kadhai add 2 tablespoons of oil and add the mustered seeds,coriander seeds,cumin seeds, curry leaves and fry till curry leaves become crunchy.Then add all powdered spices to it and saute for a second.Now add salt and quickly add all of the fried ingredients(Makhana,peanuts, cashew nuts ,sliced coconut) to this mixture.Give a good mix and toss it well.
Switch off the gas and transfer this mixture to a bowl.Let it cool for 4 to 5 minutes and here , the Makhana Chiwda is ready for you !
Enjoy it at tea time or any time.
This chiwda can be stored in an airtight container after completely cooled down.
