Medu Vada
South indian cuisine is famous in all over world.It is happily consumed by all age groups.The speciality of the south indian food is Less Ingredients,More Taste.
Today we are going to make a popular south indian dish called Medu Vada.
Here are the ingredients :
Ingredients For Medu Vada
Split Black Gram (Urad Dal ) 2 cups
Rice Flour (Chawal ka aatta) 2 tablespoon
Fresh coconut thin pieces 2 tablespoons
Black peppercorns 1 tablespoon
Cumin seeds 1/2 tablespoon
Green chilly small pieces 1/2 tablespoon
Curry leaves 6 to 7
Salt to taste
Ingredients for Chutney
Roasted Gram dal (Chana Dal) 2 tablespoons
Fresh coconut grated (2 tablespoons)
Garlic cloves 2 to 3
Green chilly 1
salt to taste
Water to requirement
For tempering Mustered seeds 1 teaspoon,Split Black gram 1/2 teaspoon, Curry leaves 4 to 5
Method:
Wash the Black Gram(Urad)Dal 3 to 4 times and soak it for 5 hours.
After the dal is soaked, discard the water completely.Grind the Soaked Dal into a fine paste without using the water.You may use 1 or 2 tablespoons of water only if required.
Now transfer the batter in a bowl and beat the batter nicely with your hand untill it gets nice white colour.This process is too importent as it helps the batter to be aerated and more fluffy.
To check if the batter has got right consistency , take a small amount of batter and drop a small ball into the water filled bowl.If the ball floats on the water, the batter is perfect.But if the batter does not float on the water, that means it is not perfectly beaten or it has a runny consistency. If the batter is runny , add 1 tablespoon of rice flour and mix it well.Also beat the batter for 1 or 2 seconds.Check the batter again by dropping into water.
Now it's time to add the taste to the batter.Add all ingredients mentioned above and give a good mix.
Now heat cooking oil into a kadhai on high heat. When oil is nicely hot ,reduce the flame to medium.Deep your palm in water and take a lemon size ball from the batter.Press it lightly and make a hole in the middle.This is the traditional shape of Medu Vada.If you find this step difficult you may use the polythin sheet or small piece of banana leaf to make the vada.
Slide this vada into the medium hot oil.Make 1 or 2 more Vadas at a time depending upon the size of your kadhai. The Vadas should be fried from both sides by turning the sides.Fry them untill golden brown colour and a nice crisp.
Make and fry all the Medu vada untill all the batter is used up.Or you can make the Medu Vada as per your requirement and store the remaining batter in the refrigerator for next 1 or 2 days.
Enjoy the Medu Vada with Coconut Chutney or Sambhar.
