Snake Guard (Padwal) sabji

 Ingredients

Snake guard (padwal) 250 grams
Potatoes  2
Fresh  grated coconut  5 tablespoons
spices ( Red chilly powder ,garam masala powder , coriander and cumin powder.)
 1 tablespoon each
Oil 3  tablespoons
Musterd seeds cumin seeds asafoetida powder and turmeric powder for tempering
Salt to taste
Water 4 tablespoons

Method:

First wash the padwal. Then cut them in between to remove the pulp and seeds. Also to check if it is not unusable or not. Then chop them into medium thick pieces.Chop the potatoes lengthwise.

We are going to make this sabji in pressure cooker so that we have to make the pieces little bit thick and have to ise a little much oil.Wash the potato pieces so that the starch will be removed.

Then keep the pressure cooler on a medium gas flame and add the oil to it. When oil is hot ,  add the musterd seeds and cumin seeds. When the crackling is stopped immediately add turmeric and asafoetida powder. Now quickly add the padwal and potato pieces and fry it nicely for 1 or two minutes.Add the salt, spices and grated coconut and mix it well.Add little water (hardly upto 2 to 3 tablespoons) and close the lid of the pressure cooker.Cook the subji on a low flame for two whistles or untill the aroma of the sabji releases. Then switch off the gas and open the cooker when it has cooled completely.
Now your sabji is ready for your meal.Have it with chapatties , phulkas or with dal chawal.
