Spinach Curry/Palak ki Sabji
Today we are going to make a semi thick curry i.e. Patal Bhaji.It is a very popular part of meal in India.Especially Palak Patal Bhaji is very famous and it is prepared in various ways.
I would like to share a simple way of making Palak Curry in my style.
So let's begin.
Ingredients:
Spinach(Palak) -2 bunches
Tomatoes- 2 small sized or 1 medium sized
Onions -1
Garlic cloves- 2 to 3
Ginger piece -1/2 inch
Carrots - 1 medium sized
Coriander leaves - 1 cup
Fresh coconut grated -4 tablespoons
Spices - (Red chilly powder , garam masala powder ,coriander powder and cumin powder.) -1 tablespoon each
For tempering - Cumin seeds -2 tablespoons, turmeric powder- 1 teaspoon and asafoetida powder -a pinch
Salt - to taste
Water - 2 cups or to requirement
Chickpea flour (besan).
Vegetable oil - 5 to 6 tablespoons
Preparations:
Clean and wash the palak leaves and chop them finely.Chop the onions,ginger, garlic,tomatoes and coriander leaves finely.Make small pieces of the carrot.
Method:
Heat the oil in the pressure cooker.Add chopped ginger,garlic and saute for a minute.Now add cumin seeds and let them crackle. After this add onions , tomatoes along with salt and give a good mix.Let the mixture cook for 2 minutes untill tomatoes and onions get soft.Then add turmeric powder , asafoetida powder, red chilly powder , coriander powder to this.Mix it well. After this , add finely chopped spinach and coriander leaves.Mix and saute all till the spinach leaves get soft.You can sprinkle some water and close the lid for a minute.Once the leaves are soft , add garam masala and a cup of water.Check the salt and add if required.Now add the grated coconut and mix.Close the lid of the pressure cooker and let the sabji cook for 4 to 5 minutes on medium gas flame or till 2 to 3 whistles on medium flame.Then switch of the gas and let the pressure cooker cool down naturally.
When the pressure of the cooker releases open it and mix and gently mash the vegetables.Add a tablespoon of chickpea flour and cook it again for 2 minutes .Check the water consistency and adjust by adding water if required.
And here , the spicy , tasty Spinach Curry is ready for your meal!
Have it with bajre ki roti , chapatties or steamed rice.

Note: for this curry , the spinach should be fresh and tender otherwise it may spoil the taste.
