Tadka Rice

Tadka Rice 

Sometimes we have leftover cooked rice.It's very painful to throw it in trash.So it's a better way to consume it  by converting it into an appetizing form.

Tadka Rice or Maharashtrian style Phodnicha Bhat is a very good way for this.

So let's begin 

Ingredients:

leftover cooked  Rice - 4 cups 

Onions (sliced)- 1 cup

Tomatoes (Finely chopped) -1/2 cup

half boiled veggies ( Green peas, cabbage ,cauliflower ) 1 cup

Spices : red chilly powder,garam masala powder, coriander powder 1 tablespoon each or 1 tablespoon of any type of homemade masala 

For tempering: Mustered seeds-2 teaspoon, cumin seeds- 2 teaspoon  ,turmeric powder -1 teaspoon and asafoetida powder -a pinch

Curry leaves- 6  to 7 

Salt- to taste 

Cooking oil -5 tablespoons

 Cillantro,Salted Peanuts,Cashew nuts ,a piece of lime for garnishing.

 Method:

Heat oil in a kadhai. Add mustered seeds and cumin seeds to it.When they crackle add sliced onion ,curry leaves, turmeric powder , asafoetida powder and salt.Mix and saute till the onions are a little soft.Now add the tomatoes and let them cook nicely.You may sprinkle a little water to fasten this process.When tomatoes are cooked it's time to add some spices.You may use a tablespoon of any kind of homemade masala or red chilly powder , garam masala powder and coriander powder 1 tablespoon of each.Mix this well and now add the half boiled veggies to this.Add  2 to 3 tablespoons of water and salt to taste.Let the veggies cook in the spices but not let them overcooked.When the veggies are cooked around 70% ,add the cooked rice.Give a good mix and cook for 2 to 3 minutes with open lid.

The water should be completely dried and the vegetables should be crunchy.

Here , the Tadka Rice or Phodnicha Bhat is ready for lunch/dinner!

Garnish it with fried peanuts , cashew nuts and cilantro.

Serves : 4


Have it with papad or salad/raita.
