Sevai Kheer/ Vermicelli Kheer

 Indian Cuisine has an important part for dessert or sweet dish.

Today we are making  Vermicelli Kheer or Sevai Kheer.

Let's have a look 

Ingredients:

Full fat milk -  500 ml

vermicelli - 2 cups

Clarified butter /Ghee - 4 tablespoons

Sugar - 1.5 cup

Nuts (cashew, almonds , raisins) 1/2 cup

Green Cardamom  - 2 nos. or cardamom powder 2 teaspoons

Saffron strands(optional) -2 to 3


Method :

For this recipe, you may use the roasted vermicelli or non roasted vermicelli.

If you are using non roasted vermicelli , saute the vermicelli on a tablespoon of butter till the vermicelli gets slightly pinkish colour.

There is no need to saute if you are using the roasted vermicelli.

Saute the nuts in 1 tablespoon of ghee.

Keep a heavy bottom kadhai / pan on the gas.Add the milk to it.Add a cup of normal water to milk in order to prevent milk fats from sticking to the bottom.Mix the water and milk well and stir it continuously.

We have to cook milk stirring continuously on a very slow gas flame till the water gets reduced.It will take a time upto 10 minutes.

Now , add the sugar to the milk and mix well.When sugar is completely melted in the milk, cook the milk for another 2 to 3 minutes and add the roasted sevai in the milk.

Mix the sevai and cook this till the sevai gets cooked in the milk.

When the vermicelli is cooked, add the roasted nuts and cardamom powder to it and mix it well.

Now switch off the gas and here, the vermicelli/ sevai kheer is ready !

Enjoy it when it is warm or you can also enjoy it when completely cooled  by refrigerating.
