Eggplant Sabji/Baingan ki Sabji

Indian meal is incomplete without spicy curry or spicy sabji.Brinjal is the most popular sabji in India.There are many types of brinjal cooked in various ways. Today we are going to cook an Eggplant or Aubergine Sabji.i.e.a brinjal long shaped , purple coloured and spongy. Let us start the recipe.   Today we are going to make a semi thick  curry i.e. Patal Bhaji.It is a very popular part of meal in India.Especially Palak Patal Bhaji is very famous and it is prepared in various ways. I would like to share a simple way of making Palak Curry in my style. So let's begin. Tadka Rice  Sometimes we have leftover cooked rice.It's very painful to throw it in trash.So it's a better way to consume it  by converting it into an appetizing form. Tadka Rice or Maharashtrian style Phodnicha Bhat is a very good way for this.  This is an all time favourite tea time/ party snack.Being crunchy,and tasty it's a combination of highly nutritious Corn,peanuts and dry coconut as well as Vegetable Oil which makes  it a protin rich snack .   In India,There are lots of types in which Green Peas or Matar is cooked.Wheather in the form of Sabji, Kachori,Cutlets etc.  Today , I would like to share a Matar recipe which I personally like and that is Bhuna Matar.This is a Dry Sabji prepared in a simple way and limited ingredients.So let's start. Sprouted Green Beans/Moong Salad/Nutri Salad

  Ingredients: Sprouted Green Beans ( Moong ) 2 cups Tomatoes chopped 1 cup Onions chopped 1 cup  Cilantro chopped 1/2 cup Chaat Masala 1 teaspoon Regular salt 1/2 teaspoon or to taste Lime juice 1 tablespoon  Sugar (optional) Green chilly (optional) Red chilly powder (optional) Method: Boil the sprouted Green Grams. Let them cool in a plate so that they won't get mashed while mixing with other ingredients. Now take a mixing bowl and add chopped onions , chopped tomatoes, chopped cilantro and add a little salt. Then add the boiled Green Grams along with chaat masala and a tablespoon of lime juice. If you want you can also add sugar to this. Freshner Salad

This salad works as a mouth freshner so I named it as Freshner Salad.This Salad enhance the taste of simple food. So let us begin  Ingredients: Tomatoes  :2 medium sized Onions : 1 medium size  Mint leaves  :(chopped finely) 1  bowl Coriander leaves : ( chopped finely) Roasted Cumin Powder :  1/2 teaspoon  Chaat masala:  1/2 teaspoon Salt : to taste Lime Juice  : 1 tablespoon Bhavnagari Gathiya  : 1/2 bowl Method: In a mixing bowl add chopped tomatoes and chopped onions.Then add chopped mint leaves and coriander leaves. Mix all these veggies together.Then add roasted cumin powder and chaat masala to the mixture.Add regular salt to taste.Then add lime juice to this mixture and mix it again.At the time of serving add Bhavnagari Gathiya and mix the salad. Cauliflower Masala

  Ingredients: Cauliflower florets - 4 Cups  Potato ( medium size ) 1 Tomato - 1 nos Onion - 2 nos Ginger - 1/2 inch Coriander leaves chopped - 1/2 cup Spices - (Red chilly powder , Garam masala powder , Coriander- Cumin Powder) - Two tablespoons each Fresh coconut grated - 1 cup  For tempering -(Musterd seeds, Cumin  seeds Turmeric powder and asafoetida powder) -1 tablespoon each  Salt - to taste  Lime juice -1/2 tablespoon (optional) Suger - 1/2 tablespoon  -(optional ) Water as per requirement Cooking oil 4 to 5 tablespoons Method : First blanch the cauliflower florets.Let them soak into hot water atleast for 10 minutes.We are going to make this subzi in pressure cooker. Kundru(Tendli/Ivy Guard )ki sabji

Ingredients:    Kundru (Ivy guard/ tendli ) 250 grams Carrot 2 nos  Onions 2 nos Fresh grated coconut 4 to 5 tablespoons  Curry leaves 7 to 8 Mix masala ( garam masala powder + red chilly powder )2 tablespoons Salt to taste  For tempering : Musterd, cumin , turmeric and asafoetida  Oil 4 to 5 tablespoons Water 1/2 cup  Preparation: Wash and chop the Kundru into 2 to 3 pieces. We have to wash these pieces as the kundru releases starch.Soak these pieces into the water.Now chop the onion finely. Cut the carrot and make medium size pieces. Grate the fresh coconut.  Ingredients Snake guard (padwal) 250 grams Potatoes  2 Fresh  grated coconut  5 tablespoons spices ( Red chilly powder ,garam masala powder , coriander and cumin powder.)  1 tablespoon each Oil 3  tablespoons  Musterd seeds cumin seeds asafoetida powder and turmeric powder for tempering Salt to taste  Water 4 tablespoons  Method:   First wash the padwal. Then cut them in between to remove the pulp and seeds. Also to check if it is not unusable or not. Then chop them into medium thick pieces.Chop the potatoes lengthwise.
